Salmon on Greens with Lime-Ginger Dressing
serves 4
Ingredients
- 4 ea salmon fillets, skinned
- 5 T lime juice (about 5 limes)
- 1/2 C honey
- 1/2 t ginger, peeled and grated
- 8 C Romaine lettuce
- 2 C mango, peeled and sliced
Instructions
- Combine the lime juice, honey and ginger. Broil the salmon on each side, basting with the juice mixture, until done.
- Plate the salmon atop the greens, garnish with the mango, dress with the juice mixture.
